Cupcakes

If you were interested I used my friend's adapted version of Nigella's Cupcake Recipe

Here is the recipe for the Nutella Icing.

Ingredients
About 40g Butter
2/3 - 1/2 cup of Nutella
1 cup of Pure Icing Sugar
1 tbl milk

Combine butter and nutella. Mix in the milk and icing sugar until the icing sugar is combined.

Easy Lemon Slice

Lemon Slice


I have been doing quite alot of baking lately. I don't know what's come over me really. But anyway I think I may start sharing some recipes here. The first one is Lemon Slice because it is oh so easy.

Lemon Slice
Recipe from Taste (however I did change it slightly)
Makes 12

Ingredients
1/2 cup sweetened condensed milk
100g butter
200g Granita biscuits (any wheat biscuits work)
1 cup desiccated coconut
1 lemon, rind finely grated

Lemon Icing
2 cups icing sugar mixture (I would recommend using less)
40g butter, softened
1 lemon, juiced

Method
  1. Grease and line a 3cm-deep, 15.5cm x 25cm (base) slab pan. Place condensed milk and butter in a small saucepan over medium heat. Cook, stirring, for 4 to 5 minutes or until butter melts.
  2. Place biscuits in a food processor and process to fine crumbs. Combine crumbs, coconut and 2 teaspoons lemon rind in a bowl. Add hot butter mixture. Stir until well combined.
  3. Press biscuit mixture into prepared pan. Refrigerate for 1 1/2 hours or until firm.
  4. Make lemon icing: Place icing sugar mixture, butter and 2 1/2 tablespoons lemon juice in a bowl. Beat with a wooden spoon until smooth. Spread icing over slice. Refrigerate for a further 30 minutes or until icing has set. Cut into pieces. Serve

I added lemon juice to the base which made a little bit more tangy. I have made this a couple of times recently and here are 2 suggestions I have. The second time I made this I added a teaspoon of vanilla essence to the icing and I also didn't use as much icing sugar. I think the icing turned out a lot better.
